Ham Fried Rice

Ham Fried Rice
Prepare everything ahead of time
Ingredients;
6 cups of cooked rice, cooled
1 cup diced cooked ham
1/2 cup diced onion
1 cup frozen peas and carrots
1/2 tsp. Accent
1/2 cup soy sauce
Mix all the above ingredients together and put in a
freezer bag. It's best to freeze flat so it takes up little room in camp freezer or ice chest.
Defrost the bag. In a large hot cast iron skillet add 2 Tbs. oil. Scramble 2 eggs and set aside. Add 3 Tbs. Oil to
pan and sauté cold rice mixture. Cook stirring until the rice and all ingredients are warmed. Toss in cooked egg and dice it while heating. Turn off heat and cover until ready to serve. Serve with
soy sauce on the side.
This rice is great with BBQ Teriyaki Chicken
