Carrot Cake

Serves 10-12

Ingredients:


4 eggs
4 t. cinnamon
2 c. flour
1 ¼ c. oil
2 c. sugar
1 can crushed pineapple
1 t. baking soda
1 ½ c. shredded carrots
1 T. baking powder
½ c. walnuts, chopped
1 t. salt
½ c. raisins (fold in last)

Directions:

1. Combine all ingredients.

2. Bake in a greased and floured pan (or use Pam or equivalent), for 45 minutes at 375 degrees. Remove.

3. Let cool and then frost. (Tastes best when refrigerated before serving.

FROSTING:

1- 8 oz. Pkg. cream cheese
1 stick margarine
¾ box powdered sugar
1 ½ t. vanilla
